  • 2 tablespoons olive oil for sautéing
  • 1/2 pound boneless skinless chicken breasts diced into bite-sized pieces
  • 2 cloves garlic minced
  • 1 3/4 cups low-sodium chicken broth for a flavorful base
  • 1 3/4 cups fat-free milk to keep it light
  • 2 tablespoons all-purpose flour for thickening the sauce
  • 1/2 teaspoon onion powder to enhance flavor
  • 1/2 teaspoon dried basil for an herby note
  • 1/2 teaspoon dried parsley flakes for garnish and flavor
  • 1 cup freshly grated parmesan cheese for that creamy, cheesy goodness

Method
 

Cooking Steps:
  1. In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts and sprinkle with a pinch of salt and pepper. Sauté until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  2. In the same skillet, add the minced garlic. Sauté for about 1 minute, or until fragrant. Be careful not to burn it, as burnt garlic can turn bitter.
  3. Pour in the low-sodium chicken broth and bring to a simmer. In a separate bowl, whisk together the fat-free milk and all-purpose flour until smooth. Gradually add this mixture to the skillet, stirring continuously to avoid lumps.
  4. Once the sauce is bubbling gently, add the farfalle pasta. Stir to combine, ensuring the pasta is submerged in the liquid. Cover and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
  5. Once the pasta is cooked, lower the heat and add the onion powder, dried basil, and parsley flakes. Stir in the freshly grated parmesan cheese until melted and creamy. Add the sautéed chicken back into the skillet and mix until everything is well combined.
  6. Taste your One-Pan Skinny Chicken Alfredo and adjust the seasoning with more salt and freshly ground black pepper if needed.
