Ingredients
  

  • 1 small head green cabbage chopped
  • 1 medium Vidalia onion chopped
  • 8 tablespoons butter
  • to taste Salt and pepper
  • 1 10-ounce can condensed cream of chicken or cream of mushroom soup
  • 1/3 cup mayonnaise
  • 3 tablespoons melted butter
  • 1 cup shredded sharp cheddar cheese
  • 1 sleeve Ritz crackers about 30, coarsely crushed

Method
 

  1. Start by chopping the small head of green cabbage into bite-sized pieces.
  2. In a large skillet, melt 4 tablespoons of butter over medium heat. Add the chopped Vidalia onion and sauté until translucent, about 5 minutes. Then, add the chopped cabbage, season with salt and pepper, and cook until the cabbage is tender, about 10-15 minutes. Stir occasionally to ensure even cooking.
  3. In a mixing bowl, combine the condensed cream of chicken or cream of mushroom soup with the mayonnaise. Stir until well blended.
  4. In your baking dish, layer half of the sautéed cabbage and onion mixture. Spread half of the creamy mixture over the top. Sprinkle half of the shredded sharp cheddar cheese on top. Repeat the layers with the remaining cabbage mixture, creamy mixture, and top with the remaining cheese.
  5. In a small bowl, combine the crushed Ritz crackers with 3 tablespoons of melted butter. Mix until the crackers are well-coated. Evenly spread this mixture over the top of the casserole.
  6. Preheat your oven to 350°F (175°C). Bake the casserole for about 30-35 minutes, or until it’s bubbly and the cracker topping is golden brown.
  7. Once baked, remove the casserole from the oven and let it cool for a few minutes. Serve warm, and enjoy this delightful Old-Fashioned Cabbage Casserole with your loved ones.
