Ingredients

For the Cake:
  • 4 ea eggs (at room temperature, separated)
  • 1 cup icing sugar
  • 1 cup Nutella
  • ½ cup unsalted butter (melted but at room temperature)
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 tablespoons cocoa powder
  • ¾ cup all-purpose flour (minus 2 tablespoons)
  • 2 cups milk (lukewarm)
  • 1 cup icing sugar (for dusting the cake)

Equipment

  • Mixing bowls
  • Whisk
  • Spatula
  • Baking Dish
  • Oven

Method

Baking Instructions:
  1. Preheat your oven to 350°F (175°C). Grease your baking dish with butter or non-stick spray to prevent sticking.
  2. Carefully separate the egg yolks from the whites. Place the yolks in one bowl and the whites in another.
  3. In the bowl with the egg yolks, add the icing sugar, melted butter, Nutella, vanilla extract, and salt. Whisk until the mixture is smooth and creamy.
  4. Sift in the cocoa powder and flour (minus 2 tablespoons) into the Nutella mixture. Stir gently to combine.
  5. Gradually pour in the lukewarm milk, whisking continuously until the batter is smooth and well combined.
  6. In a clean bowl, beat the egg whites until stiff peaks form. This step is crucial as it helps create the cake’s magical layers.
  7. Gently fold the beaten egg whites into the Nutella batter. Be careful not to deflate the egg whites, as this will help the cake achieve its light texture.
  8. Pour the batter into the prepared baking dish and bake for 40-45 minutes, or until the top is set and a toothpick inserted in the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the dish for about 10 minutes. Then, transfer it to a wire rack to cool completely. Dust with icing sugar before serving.

Notes

  • Ensure your eggs are at room temperature for best volume when whipping the egg whites.
  • Be gentle when folding the egg whites to maintain the cake's airiness.
  • Let the cake cool completely before dusting with icing sugar to avoid melting.
