Ingredients
  

For the Cookies:
  • 1 cup granulated sugar divided; 1 cup for dough, ¼ cup for rolling
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup Oleico Safflower Oil
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 1 teaspoon vanilla extract
Optional coatings:
  • Colored sanding sugar
  • multi-colored jimmies
  • nonpareils sprinkles

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. Step 3: In a large mixing bowl, combine the Oleico Safflower Oil and 1 cup of granulated sugar. Blend until smooth. Add the egg, egg yolk, and vanilla extract, mixing until fully incorporated.
  4. Step 4: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Step 5: Cover the dough with plastic wrap and refrigerate for about 30 minutes.
  6. Step 6: Scoop the dough using a cookie scoop or tablespoon, rolling each ball in the remaining ¼ cup of granulated sugar before placing them on the prepared baking sheet.
  7. Step 7: Add optional coatings by gently pressing them into the tops of the cookie dough balls.
  8. Step 8: Bake for about 10-12 minutes, or until the edges are lightly golden.
  9. Step 9: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Make sure your egg and egg yolk are at room temperature for better emulsification in the batter.
  • Don’t skip the chilling step! It’s key to preventing the cookies from spreading too much during baking.
