Ingredients
  

  • 2 cups rolled oats or quick oats
  • 1 cup peanut butter natural
  • 1/3 cup maple syrup natural sweetener
  • 1/4 cup chocolate chips optional, dark or dairy-free

Equipment

  • Baking sheet or plate
  • Parchment paper

Method
 

  1. In a large mixing bowl, combine the rolled oats, peanut butter, and maple syrup. If you’re using chocolate chips, you can add those in now as well.
  2. Using a spatula, mix the ingredients together until they are well combined. The mixture will be thick, but that’s exactly what you want for these cookies.
  3. Using your hands or a cookie scoop, form small balls or patties of the mixture. Place them on a baking sheet or plate lined with parchment paper for easy removal.
  4. Refrigerate the formed cookies for about 30 minutes to an hour. This will help them firm up and make them easier to handle.
  5. Once set, dig in and enjoy your No Bake Oatmeal Cookies! Store any leftovers in an airtight container in the fridge.
