Ingredients
  

  • 1/2 cup creamy peanut butter
  • 2 tablespoons honey or maple syrup for substitution
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup Rice Krispies cereal
  • 1/4 cup oat flour or flax seeds
  • 1/2 cup old-fashioned oats
  • 3 tablespoons chocolate chips milk or dark chocolate
  • Optional additions nuts, dried fruits, seeds, or coconut flakes

Method
 

  1. Gather all your ingredients and measure them out. This will make the process smooth and quick.
  2. In a mixing bowl, combine the creamy peanut butter, honey, vanilla extract, and salt. Stir until the mixture is smooth and well combined.
  3. Add the Rice Krispies, oat flour (or blended oats), old-fashioned oats, and chocolate chips to the wet mixture. Mix until everything is evenly distributed.
  4. Using your hands or a spoon, scoop out portions of the mixture and form them into cookie shapes. Place them on a baking sheet lined with parchment paper.
  5. Place the baking sheet in the refrigerator for about 30 minutes to allow the cookies to firm up. This will help them hold their shape.
  6. Once chilled, your No Bake Healthy Breakfast Cookies are ready to be enjoyed! Store any leftovers in an airtight container in the fridge for up to a week.
