Ingredients
  

  • 15 pitted dates soaked
  • 2/3 cup unsweetened cocoa powder
  • 1 cup whole roasted unsalted almonds
  • 1 tbsp honey or agave if vegan
  • 2 tbsp water adjust as needed
  • 3 tbsp confectioner's sugar for dusting

Method
 

  1. Soak the pitted dates in warm water for about 10 minutes to soften them. Drain and set aside.
  2. In a food processor, combine the soaked dates, cocoa powder, almonds, honey (or agave), and 2 tablespoons of water. Process until smooth and sticky, adding more water if necessary.
  3. Form small balls from the mixture, about the size of a tablespoon, rolling them in your palms until smooth.
  4. Roll each ball in confectioner's sugar until fully coated for a snowy appearance.
  5. Place the rolled fudge balls on a cookie sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.

Notes

  • Store in an airtight container in the fridge for up to a week.
  • Freeze for longer storage, up to three months.
  • Let frozen fudge balls sit at room temperature for a few minutes before enjoying.
