Soak the pitted dates in warm water for about 10 minutes to soften them. Drain and set aside.
In a food processor, combine the soaked dates, cocoa powder, almonds, honey (or agave), and 2 tablespoons of water. Process until smooth and sticky, adding more water if necessary.
Form small balls from the mixture, about the size of a tablespoon, rolling them in your palms until smooth.
Roll each ball in confectioner's sugar until fully coated for a snowy appearance.
Place the rolled fudge balls on a cookie sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
