Preheat your oven as per the instructions on the chocolate cake mix box. Prepare the cake batter according to the package instructions and pour it into a greased baking dish. Bake until a toothpick inserted in the center comes out clean. Let it cool completely before cutting it into cubes.
In a mixing bowl, whisk together the vanilla or white chocolate pudding mix and 3 cups of milk. Add 2-3 drops of crème de menthe syrup or candy flavoring and food coloring. Allow the pudding to set according to package instructions.
In another bowl, take half of the cool whip and fold it into the prepared pudding mixture until light and airy.
Crush the Oreos until fine crumbs using a food processor or a ziplock bag and a rolling pin. Set aside.
In a trifle dish or glass bowl, layer the Mint Trifle starting with chocolate cake cubes, followed by the mint pudding mixture, and then a layer of crushed Oreos. Repeat until all ingredients are used, finishing with mint pudding.
Top with the remaining cool whip and sprinkle chopped Andes mints and crushed Oreos for decoration. Chill in the refrigerator for at least 2 hours before serving.
