Mandarin Pancakes

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup boiling water
  • 2 tablespoons sesame oil

  • Non-stick skillet
  • Plastic Wrap

Method
 

  1. Begin by placing the all-purpose flour in a mixing bowl. Gradually pour in the boiling water while stirring with a fork or chopsticks. Knead into a smooth dough.
  2. Cover the dough with a damp cloth or plastic wrap and let it rest for about 30 minutes.
  3. Divide the dough into 8 equal portions. Roll each portion into a ball and then roll each ball into a thin circle, about 6 inches in diameter.
  4. Brush a thin layer of sesame oil on each pancake. Stack them with parchment paper in between to prevent sticking.
  5. Heat a non-stick skillet over medium heat. Cook each pancake for about 1-2 minutes per side until golden brown.
  6. Keep the cooked pancakes warm by wrapping them in a clean kitchen towel or placing them in a covered dish.

Notes

  • Use boiling water for the right dough consistency.
  • Let the dough rest for softer pancakes.
  • Aim for thin circles for even cooking.
