Begin by placing the all-purpose flour in a mixing bowl. Gradually pour in the boiling water while stirring with a fork or chopsticks. Knead into a smooth dough.
Cover the dough with a damp cloth or plastic wrap and let it rest for about 30 minutes.
Divide the dough into 8 equal portions. Roll each portion into a ball and then roll each ball into a thin circle, about 6 inches in diameter.
Brush a thin layer of sesame oil on each pancake. Stack them with parchment paper in between to prevent sticking.
Heat a non-stick skillet over medium heat. Cook each pancake for about 1-2 minutes per side until golden brown.
Keep the cooked pancakes warm by wrapping them in a clean kitchen towel or placing them in a covered dish.
