Ingredients
  

  • 2 cans garbanzo beans (drained and rinsed)
  • 1 cup quick oats or 3/4 cup flour or almond meal
  • 1/4 cup applesauce or yogurt or pumpkin
  • 3 tbsp oil or 1/4 cup nut butter of choice
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking soda each
  • 1/2 tsp salt each
  • 2 tsp baking powder
  • 1/2 cup Homemade Nutella or peanut butter or your favorite chocolate spread
  • 1 1/3 cup sugar or xylitol (liquid sweetener works too)
  • 1/4 cup chocolate chips or more if desired

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: In a blender or food processor, combine the drained garbanzo beans, applesauce, and oil. Blend until smooth and creamy.
  3. Step 3: In a large mixing bowl, combine the quick oats, baking powder, baking soda, and salt. Stir to combine.
  4. Step 4: Pour the blended bean mixture into the bowl with the dry ingredients. Add the vanilla extract and sugar. Mix until just combined.
  5. Step 5: Gently fold in your choice of chocolate spread.
  6. Step 6: Stir in the chocolate chips until evenly distributed.
  7. Step 7: Pour the batter into a greased baking pan. Bake for about 25-30 minutes, or until golden.
  8. Step 8: Allow the pie to cool for at least 10 minutes before slicing. Serve warm.

Notes

  • Store leftover pie covered at room temperature for up to 3 days.
  • Freeze the baked pie for up to 2 months; thaw overnight in the refrigerator before serving.
