Cooking Instructions:
- Preheat your oven to 400°F (200°C). This high temperature will help achieve a lovely golden crust on your salmon.
- In a medium mixing bowl, combine 2 tablespoons of unsalted butter (melted), minced garlic, lemon juice, honey, soy sauce, Dijon mustard, fresh parsley, salt, onion powder, dried dill, paprika, and pepper. Whisk until everything is blended.
- Place the salmon fillet in a large baking dish. Pour the marinade over the salmon, ensuring it's evenly coated. Let it marinate for at least 15 minutes.
- In another bowl, mix panko breadcrumbs, 2 tablespoons of melted butter, and grated Parmesan cheese. This mixture will create a crispy crust for the salmon.
- In a bowl, toss the broccoli florets with olive oil, salt, and pepper. Spread them around the salmon in the baking dish.
- Top the marinated salmon with the panko mixture, pressing it down slightly to adhere. Place the baking dish in the oven and bake for 15-20 minutes.
- Remove the dish from the oven and let it cool for a couple of minutes. Serve the Lemon Garlic Butter Salmon with the roasted broccoli on the side.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat salmon at 350°F (175°C) until warmed through.
- This dish works well in salads or wraps for meal prep!
