Ingredients
  

For the Salmon:
  • 1 fillet wild Alaskan salmon (3-4 pounds), with or without skin
  • 2 tablespoons unsalted butter melted
  • 4-6 cloves garlic minced
  • 1/4 cup lemon juice
  • 2 tablespoons honey
  • 1 1/2 teaspoons reduced sodium soy sauce
  • 1 1/2 teaspoons Dijon mustard
  • 1 tablespoon fresh parsley (chopped or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 2/3 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 1/2 cup freshly grated Parmesan
For the Broccoli:
  • 5 cups broccoli florets
  • 2 1/2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Method
 

Cooking Instructions:
  1. Preheat your oven to 400°F (200°C). This high temperature will help achieve a lovely golden crust on your salmon.
  2. In a medium mixing bowl, combine 2 tablespoons of unsalted butter (melted), minced garlic, lemon juice, honey, soy sauce, Dijon mustard, fresh parsley, salt, onion powder, dried dill, paprika, and pepper. Whisk until everything is blended.
  3. Place the salmon fillet in a large baking dish. Pour the marinade over the salmon, ensuring it's evenly coated. Let it marinate for at least 15 minutes.
  4. In another bowl, mix panko breadcrumbs, 2 tablespoons of melted butter, and grated Parmesan cheese. This mixture will create a crispy crust for the salmon.
  5. In a bowl, toss the broccoli florets with olive oil, salt, and pepper. Spread them around the salmon in the baking dish.
  6. Top the marinated salmon with the panko mixture, pressing it down slightly to adhere. Place the baking dish in the oven and bake for 15-20 minutes.
  7. Remove the dish from the oven and let it cool for a couple of minutes. Serve the Lemon Garlic Butter Salmon with the roasted broccoli on the side.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat salmon at 350°F (175°C) until warmed through.
