These Lasagna Cupcakes are a fun twist on a classic! Bite-sized layers of beef, marinara, and cheese create a perfect meal for any gathering.

Ingredients
  

For the Cupcakes:
  • 1/3 pound ground beef
  • 1 cup marinara sauce
  • 24 wonton wrappers
  • 1 3/4 cups shredded mozzarella cheese divided
  • 3/4 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese plus more for topping
  • Basil for garnish, optional

Method
 

Instructions:
  1. Step 1: Preheat your oven to 375°F (190°C) to prepare for baking.
  2. Step 2: In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and stir in the marinara sauce. Let it simmer for a few minutes to combine the flavors.
  3. Step 3: Lightly grease a muffin tin with cooking spray or olive oil to prevent the cupcakes from sticking.
  4. Step 4: Place one wonton wrapper in each muffin cup, pressing it down gently to form a cup shape. You can add additional wrappers for a thicker base if desired.
  5. Step 5: Spoon a layer of the beef and marinara mixture into each wonton wrapper. Then, add a dollop of ricotta cheese on top, followed by a sprinkle of shredded mozzarella.
  6. Step 6: Continue layering with another wonton wrapper, more beef mixture, and more cheeses, ending with a final layer of mozzarella on top.
  7. Step 7: Bake the cupcakes in the preheated oven for 18-20 minutes or until the tops are golden and bubbly.
  8. Step 8: Let the cupcakes cool for a few minutes before carefully removing them from the muffin tin. Garnish with additional Parmesan cheese and fresh basil, if desired.

Notes

  • For an extra crunch, bake the wonton wrappers for a few minutes before adding the filling.
  • Try different types of cheese like Fontina or Gouda for a unique flavor profile.
