Ingredients

  • 2 cups feta cheese (crumbled)
  • 3-4 tablespoons olive oil
  • 1 clove garlic (diced)
  • 1 tablespoon fresh mint (or 1 teaspoon dried)
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup pepperoncini peppers (chopped, about 6-7 peppers)

Equipment

  • Food Processor
  • Measuring cups and spoons
  • Spatula
  • Mixing Bowl

Method

  1. Step 1: Gather Your Ingredients. Start by collecting all your ingredients. Ensure your feta cheese is crumbled and your pepperoncini peppers are chopped.
  2. Step 2: Blend the Feta and Olive Oil. In a food processor, combine the crumbled feta cheese and 3 tablespoons of olive oil. Blend until smooth and creamy. If you prefer a thinner consistency, add an additional tablespoon of olive oil.
  3. Step 3: Add Garlic and Herbs. Next, add the diced garlic, fresh mint, and crushed red pepper flakes to the food processor. Pulse a few times to combine the ingredients, allowing the flavors to meld.
  4. Step 4: Incorporate the Pepperoncini. Finally, add the chopped pepperoncini peppers to the mixture. Pulse a few more times until the peppers are evenly distributed throughout the spread, but be careful not to over-blend; you want to retain some texture!
  5. Step 5: Taste and Adjust. Taste your Kopanisti and adjust the seasoning if necessary. If you like it spicier, feel free to add more crushed red pepper flakes or even a bit more pepperoncini.
  6. Step 6: Serve and Enjoy! Transfer your delicious Kopanisti to a serving bowl. Drizzle with a little extra olive oil on top and garnish with a few mint leaves for a beautiful presentation. Serve it alongside fresh bread, crackers, or vegetable sticks, and watch it disappear in no time!

Notes

  • Make it ahead of time for deeper flavors; store in an airtight container in the fridge.
  • Try using low-fat feta cheese for a lighter option.
  • Substitute fresh herbs like dill or parsley for a different flavor twist.
