Ingredients
  

  • 2 cups granulated white sugar
  • 1 cup unsalted butter at room temperature
  • 3 cups mashed ripe bananas (about 6 medium bananas)
  • 4 large eggs well beaten
  • 2 cups cake flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Gather all your ingredients to ensure a smooth baking process. Make sure your butter is softened and your bananas are very ripe for the best flavor.
  2. Step 2: In a large mixing bowl, cream together 1 cup of unsalted butter and 2 cups of granulated white sugar until light and fluffy, about 3-5 minutes.
  3. Step 3: Add 4 large well-beaten eggs to the mixture and mix until fully combined and smooth.
  4. Step 4: Fold in 3 cups of mashed ripe bananas using a rubber spatula until evenly distributed.
  5. Step 5: In a separate bowl, whisk together 2 cups of cake flour, 2 teaspoons of baking soda, and 1 teaspoon of salt.
  6. Step 6: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Step 7: Pour the batter into a greased 9x5 inch loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
  8. Step 8: Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
