In a mixing bowl, combine the shredded part-skim mozzarella and cream cheese. Microwave for about 30 seconds until melted, then stir until smooth.
Mix in the coconut or almond flour, beaten eggs, and salt. Combine until a dough forms, adding more flour if too sticky.
Place the dough on parchment paper. Use another piece of parchment on top to roll it out into a circular shape about ¼ inch thick. Transfer to a baking sheet.
Bake the crust for about 10-12 minutes until golden brown and firm to the touch.
Remove the crust from the oven and sprinkle shredded mozzarella evenly over the top. Add pepperoni or your choice of toppings.
Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
Once out of the oven, let the pizza cool for a few minutes before slicing and serving.
