Ingredients
  

  • 2 cups water warm and divided
  • 1 teaspoon xanthan gum
  • 1 cup keto brown sugar or allulose
  • 1.5 tablespoons honey extract

Method
 

  1. In a medium saucepan, combine 1 3/4 cups of warm water with the keto brown sugar (or allulose). Turn the heat to medium-low and stir until fully dissolved.
  2. Once the sweetener is dissolved, slowly whisk in the xanthan gum. This will help thicken your mixture, giving it that honey-like consistency. Keep whisking until there are no lumps.
  3. Remove the saucepan from heat and stir in the honey extract. The aroma will be incredible!
  4. If you prefer a thicker honey, return to low heat and let it simmer for a few more minutes, stirring occasionally. If it’s too thick, add a little more warm water until you reach your desired consistency.
  5. Let your Keto Honey cool completely before transferring it into a storage container. Once cooled, it can be stored in the refrigerator for longer shelf life.

Notes

  • Store in an airtight container in the refrigerator for up to two weeks.
  • If it thickens when chilled, give it a good stir before using.
  • Experiment with flavors by adding extracts like vanilla or almond.
