In a large skillet, heat the olive oil over medium heat. Add the chicken pieces to the skillet, season with Italian seasoning, salt, and pepper. Sauté for about 5-7 minutes, or until the chicken is cooked through and golden brown.
Once the chicken is cooked, add the minced garlic and chopped tomatoes to the skillet. Cook for an additional 2-3 minutes, stirring occasionally, until the garlic is fragrant and the tomatoes have softened.
Next, add the broccoli florets to the skillet. Stir everything together and cook for about 4-5 minutes, until the broccoli is vibrant and slightly tender.
Stir in the baby spinach and cream cheese. Allow the cream cheese to melt, stirring continuously until everything is well combined and creamy.
Sprinkle the shredded cheese over the top of the chicken and vegetable mixture. Cover the skillet and let it cook for another 2-3 minutes, allowing the cheese to melt beautifully.
