  • 1 large carrot chopped into 1/2-inch pieces
  • 1 large celery rib chopped into 1/2-inch pieces

Method
 

  1. Start by washing and peeling the carrot. Chop the onion, carrot, and celery into 1/2-inch pieces.
  2. In a large skillet or saucepan, heat 1 tablespoon of olive oil over medium heat.
  3. Add the chopped onion to the skillet and sauté for about 2-3 minutes, until translucent.
  4. Add the chopped carrot and celery to the skillet, stirring together, and sauté for another 5-7 minutes.
  5. Season lightly with salt and pepper, and it’s ready to be used as a base for your favorite dishes.
