Ingredients
  

  • 1 ½ pounds thin carrots peeled and ends removed (or cut lengthwise if using thicker carrots)
  • 1-2 tablespoons olive oil
  • 1 tablespoon good quality balsamic vinegar (aged 18 years recommended)
  • 1 tablespoon honey
  • Kosher salt to taste
  • Freshly ground black pepper to taste (optional)

Method
 

  1. Preheat your oven to 425°F (220°C). A hot oven ensures perfectly caramelized carrots.
  2. If you're using thin carrots, simply peel them and trim the ends. If you have thicker carrots, cut them lengthwise into halves or quarters to ensure even cooking.
  3. In a mixing bowl, whisk together the olive oil, balsamic vinegar, and honey until well combined. This mixture will create that delicious glaze that will coat the carrots.
  4. Place the prepared carrots in a large bowl, pour the glaze over them, and season with kosher salt. Toss everything together until the carrots are evenly coated in the glaze.
  5. Spread the glazed carrots in a single layer on a large baking sheet. Make sure they are not overcrowded to allow for proper roasting.
  6. Roast in the preheated oven for about 20-25 minutes, or until the carrots are tender and caramelized, tossing halfway through for even cooking.
  7. Remove the carrots from the oven and let them cool slightly before serving. You can sprinkle freshly ground black pepper on top for an extra kick, if desired.
