Ingredients
  

For the Cookie Base:
  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 1/3 cup melted coconut oil
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon flaky sea salt
For the Peanut Butter Layer:
  • 3/4 cup creamy peanut butter
  • 2 tablespoons almond butter
  • 1/4 cup maple syrup for the peanut butter layer
For the Chocolate Coating:
  • 12 ounces dark chocolate chopped
  • 1 tablespoon coconut oil to help melt the chocolate smoothly

Method
 

How to Make the Bars:
  1. In a large mixing bowl, combine the almond flour, coconut flour, melted coconut oil (1/3 cup), honey or maple syrup, vanilla extract, and flaky sea salt. Mix until well combined and a dough forms. If the dough feels too dry, you can add a bit more melted coconut oil.
  2. Line your baking dish with parchment paper for easy removal. Press the cookie dough evenly into the bottom of the dish, creating a smooth layer. Place it in the freezer to set while you prepare the peanut butter layer.
  3. In another bowl, mix together the creamy peanut butter, almond butter, and maple syrup until smooth. If the mixture is too thick, you can warm it slightly in the microwave to make it easier to spread.
  4. Remove the cookie base from the freezer and pour the peanut butter mixture over it, spreading it evenly. Return the dish to the freezer for about 30 minutes to let the layers firm up.
  5. While the peanut butter layer is setting, melt the chopped dark chocolate and 1 tablespoon of coconut oil in a double boiler or microwave. Stir until smooth and fully melted.
  6. Once the peanut butter layer has set, remove the dish from the freezer. Pour the melted chocolate over the top, spreading it out evenly to cover the entire surface.
  7. Return the dish to the freezer for another 30 minutes to allow the chocolate to harden. Once firm, lift the bars out using the parchment paper and cut them into squares or rectangles.

Notes

  • Store the bars in an airtight container in the fridge for up to one week.
  • For longer storage, you can freeze the bars, wrapping them individually in parchment paper.
  • Thaw the frozen bars in the fridge overnight before enjoying.
