Method
 

Mastering Healthy Orange Pie With Almond Crust:
  1. Step 1: Prepare the Crust - Preheat your oven to 350°F (175°C). In a food processor, combine the almonds and 3 tablespoons of oat flour. Pulse until the almonds are finely ground. Add the melted almond butter, softened coconut oil, and a pinch of salt. Process until the mixture resembles wet sand.
  2. Step 2: Form the Crust - Add the egg white to the almond mixture and pulse a few more times until fully incorporated. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 10-12 minutes, or until lightly golden. Remove from the oven and let it cool while you prepare the filling.
  3. Step 3: Make the Filling - In a mixing bowl, combine the fat-free cottage cheese, honey, orange juice, orange zest, 1 tablespoon of oat flour, vanilla extract, the large egg, and egg yolk. Using a whisk, blend until smooth and creamy. Ensure there are no lumps for the best texture.
  4. Step 4: Assemble the Pie - Pour the orange filling into the cooled almond crust. Spread it evenly using a spatula.
