Ingredients
  

  • 2 large eggs
  • 1 cup unsweetened applesauce or 1 large ripe banana, mashed
  • 1 cup unsweetened almond butter
  • 1 cup pure maple syrup
  • 2 cups quick oats
  • 1/2 tsp ground cinnamon optional
  • 1/2 tsp sea salt
  • 1 to 1.5 cups add-ins (see note)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, beat the eggs until well combined. Add in the applesauce or mashed banana, almond butter, and maple syrup. Mix until smooth.
  3. Step 3: In a separate bowl, whisk together the quick oats, ground cinnamon (if using), and sea salt.
  4. Step 4: Gradually add the dry mixture into the wet ingredients, stirring until well combined. Fold in any add-ins.
  5. Step 5: Portion out the dough onto a lined baking sheet and bake for 10-12 minutes until golden brown.
  6. Step 6: Let the cookies cool on the baking sheet before transferring to a wire rack.

Notes

  • Store cookies in an airtight container at room temperature for up to a week.
  • Freeze for up to 3 months for longer storage.
  • Reheat in the microwave for 10-15 seconds or in the oven for a few minutes.
