  • 3 limes, zested and juiced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons ground cumin

  1. Start by zesting and juicing the limes. In a mixing bowl, combine the lime juice, lime zest, chicken broth, kosher salt, black pepper, and ground cumin. Stir to combine.
  2. Pat the chicken breasts dry with paper towels, then season them with salt and pepper on both sides.
  3. Place the seasoned chicken breasts in the Instant Pot. Pour the lime and broth mixture over the chicken.
  4. Secure the lid on the Instant Pot and set it to cook on high pressure for 10 minutes. Allow the pressure to release naturally for 5 minutes before performing a quick release.
  5. Carefully remove the chicken from the pot and use two forks to shred it. You can mix it with the juices for added flavor or serve it immediately.
