For the Egg Salad:
  • 2 hard-boiled eggs roughly chopped
  • 3 tablespoons 2% plain Greek yogurt
  • 1.5 tablespoons green onions sliced
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon smoked paprika or regular
  • 0.25 teaspoon garlic powder
  • Salt and pepper to taste
For the Sandwich:
  • 1 tablespoon butter room temperature
  • 4 slices bread of choice thick slices
  • 2 ounces cheddar cheese sliced

Method:
  1. In a mixing bowl, combine the roughly chopped hard-boiled eggs, Greek yogurt, sliced green onions, onion powder, smoked paprika, garlic powder, and season with salt and pepper. Mix gently until all ingredients are well combined and the eggs are coated in the yogurt.
  2. Take two slices of your chosen bread and spread a generous amount of the egg salad mixture on one slice. Top with slices of cheddar cheese, then place the second slice of bread on top.
  3. Spread the room temperature butter evenly on the outside of both slices of bread. This will create a beautiful golden-brown crust when grilled.
  4. Preheat a skillet over medium heat. Once hot, carefully place the assembled sandwich in the skillet. Grill for about 3-4 minutes on one side, or until golden brown. Flip the sandwich carefully and grill the other side for another 3-4 minutes until the cheese is melted and the bread is crisp.
  5. Once both sides are perfectly grilled and the cheese is gooey, remove the sandwich from the skillet. Allow it to cool for a minute before slicing in half. Serve warm and enjoy every bite of your Healthy Egg Salad Grilled Cheese Sandwich!
