Ingredients
  

  • 1 cup whole wheat flour (scoop and level to measure)
  • 1/2 cup almond flour
  • 1/2 cup unbleached all-purpose flour (or oat flour)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup buttermilk
  • 1/2 cup real maple syrup
  • 2 large eggs
  • 1/3 cup olive oil *Use light or extra virgin for best flavor.
  • 2 tsp vanilla extract
  • 1 1/2 cups fresh blueberries

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C) for even baking.
  2. Step 2: Grease a muffin tin with olive oil or line with paper liners to prevent sticking.
  3. Step 3: In a large bowl, whisk together the whole wheat flour, almond flour, all-purpose flour (or oat flour), baking powder, baking soda, and salt.
  4. Step 4: In another bowl, whisk together the buttermilk, maple syrup, eggs, olive oil, and vanilla extract until smooth.
  5. Step 5: Pour the wet mixture into the dry ingredients and stir gently until just combined.
