Ingredients
  

  • 4 T extra virgin olive oil for rich flavor
  • 2 T fresh mint finely chopped
  • 2 T fresh oregano finely chopped
  • 3 T fresh lemon juice adjust to taste
  • 1 12 oz. jar roasted red pepper drained and diced
  • 1 pound fresh white or brown mushrooms choose your favorite variety
  • 1/3 cup crumbled feta cheese for creamy finish
  • to taste Salt and fresh ground black pepper enhancing all flavors

Method
 

  1. Step 1: Preheat the oven to 400°F (200°C) for perfect roasting.
  2. Step 2: Clean mushrooms with a damp cloth. Slice larger ones for even roasting.
  3. Step 3: In a mixing bowl, combine olive oil, mint, oregano, and lemon juice. Stir well.
  4. Step 4: Add diced red pepper and mushrooms to the marinade. Toss to coat.
  5. Step 5: Season with salt and pepper. Toss again for even seasoning.
  6. Step 6: Spread the mixture on a baking sheet in a single layer. Bake for 20-25 minutes until tender.
  7. Step 7: Sprinkle feta over the mushrooms and return to oven for 5 minutes.
  8. Step 8: Serve warm, garnished with extra herbs or lemon if desired.
