Ingredients
  

  • 1.5 cups regular or quick oats (135g)
  • 1 cup ground flaxseed (100g)
  • 2/3 cup crispy rice cereal (like Rice Krispies) (20-25g)
  • 1 cup creamy peanut butter or other nut butter or sunflower butter (240g)
  • 1 cup mini chocolate chips, raisins, dried cherries, coconut, chopped nuts, or a combination (170g)
  • 1/2 cup honey or agave (120 ml)
  • 2 teaspoons vanilla extract (10 ml)

Method
 

  1. Start by measuring out all your ingredients. This will make the mixing process much smoother and quicker.
  2. In a large mixing bowl, combine the oats, ground flaxseed, and crispy rice cereal. Stir until everything is well mixed.
  3. Add the creamy peanut butter, honey (or agave), and vanilla extract to the dry ingredients. Use a spatula to mix everything together until it forms a cohesive dough.
  4. Fold in your choice of mini chocolate chips, raisins, dried cherries, coconut, or chopped nuts. Make sure they are evenly distributed throughout the mixture.
  5. Using your hands or a small cookie scoop, form the mixture into bite-sized balls or squares. Place them on a baking sheet lined with parchment paper.
  6. Refrigerate the granola bites for at least 30 minutes to help them firm up. This step is crucial for maintaining their shape.
  7. Once chilled, your granola bites are ready to enjoy! Store any leftovers in an airtight container in the fridge for up to a week.
