Ingredients
  

For the Dough:
  • 1 cup water
  • 6 tablespoons unsalted butter cut into pieces
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups Gruyère cheese grated, reserve some for sprinkling
  • ½ teaspoon black pepper freshly ground
  • ½ teaspoon nutmeg (optional)
  • 1 tablespoon Dijon mustard (optional)

Method
 

Instructions:
  1. In a medium saucepan, combine 1 cup of water, 6 tablespoons of unsalted butter, and 1 teaspoon of salt. Bring to a boil over medium heat, then remove from heat.
  2. Stir in 1 cup of all-purpose flour with a wooden spoon until the mixture forms a ball. Return to low heat for 1-2 minutes to dry the dough slightly.
  3. Transfer the dough into a mixing bowl. Allow to cool for a few minutes, then add 4 large eggs one at a time, mixing well after each addition until smooth and glossy.
  4. Fold in 2 cups of grated Gruyère cheese, ½ teaspoon of freshly ground black pepper, and if desired, ½ teaspoon of nutmeg and 1 tablespoon of Dijon mustard. Mix until well combined.
  5. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the baking sheet, spacing 2 inches apart. Sprinkle extra Gruyère cheese on top.
  6. Bake for about 20-25 minutes, or until puffed and golden brown. Avoid opening the oven door during baking.
  7. Remove from oven, let cool slightly, and serve warm.

Notes

  • Serve immediately after baking for the best texture.
  • Add chopped cooked bacon or sautéed onions for a savory twist.
  • Experiment with different cheese for unique flavors.
