Instructions:
- In a medium saucepan, combine 1 cup of water, 6 tablespoons of unsalted butter, and 1 teaspoon of salt. Bring to a boil over medium heat, then remove from heat.
- Stir in 1 cup of all-purpose flour with a wooden spoon until the mixture forms a ball. Return to low heat for 1-2 minutes to dry the dough slightly.
- Transfer the dough into a mixing bowl. Allow to cool for a few minutes, then add 4 large eggs one at a time, mixing well after each addition until smooth and glossy.
- Fold in 2 cups of grated Gruyère cheese, ½ teaspoon of freshly ground black pepper, and if desired, ½ teaspoon of nutmeg and 1 tablespoon of Dijon mustard. Mix until well combined.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the baking sheet, spacing 2 inches apart. Sprinkle extra Gruyère cheese on top.
- Bake for about 20-25 minutes, or until puffed and golden brown. Avoid opening the oven door during baking.
- Remove from oven, let cool slightly, and serve warm.
