  • 2 slices Heirloom tomato thinly sliced for freshness
  • 1 ounce Sliced Nova lox a rich, smoky element

  • 1/2 tablespoon Capers drained, adds a briny kick
  • a few Parsley leaves for garnish

  1. Step 1: Prepare Your Ingredients - Gather all your ingredients. Chop the chives and slice the heirloom tomatoes, red onions, and Nova lox.
  2. Step 2: Beat the Eggs - In a mixing bowl, crack the two large eggs and add the chopped chives, salt, and pepper. Whisk until well combined and fluffy.
  3. Step 3: Heat the Skillet - Place your non-stick skillet over medium heat. Spray with cooking spray to prevent sticking.
  4. Step 4: Cook the Eggs - Pour the beaten egg mixture into the skillet, tilting the pan to spread evenly. Cook undisturbed for 1-2 minutes until the edges set.
  5. Step 5: Add the Fillings - When still slightly runny on top, sprinkle goat cheese, heirloom tomato slices, Nova lox, red onion, and capers over one half of the omelet.
  6. Step 6: Fold the Omelet - Carefully fold the omelet in half over the filling. Cook for another minute until the cheese melts and eggs are fully cooked.
