- Step 1: Prepare Your Ingredients - Gather all your ingredients. Chop the chives and slice the heirloom tomatoes, red onions, and Nova lox.
- Step 2: Beat the Eggs - In a mixing bowl, crack the two large eggs and add the chopped chives, salt, and pepper. Whisk until well combined and fluffy.
- Step 3: Heat the Skillet - Place your non-stick skillet over medium heat. Spray with cooking spray to prevent sticking.
- Step 4: Cook the Eggs - Pour the beaten egg mixture into the skillet, tilting the pan to spread evenly. Cook undisturbed for 1-2 minutes until the edges set.
- Step 5: Add the Fillings - When still slightly runny on top, sprinkle goat cheese, heirloom tomato slices, Nova lox, red onion, and capers over one half of the omelet.
- Step 6: Fold the Omelet - Carefully fold the omelet in half over the filling. Cook for another minute until the cheese melts and eggs are fully cooked.
- Step 7: Serve and Garnish - Slide the omelet onto a plate. Garnish with additional chives and parsley leaves.
