Ingredients

  • 3/4 cup milk
  • 2 whole eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons sugar
  • 1/2 cup all-purpose flour
  • a pinch salt
  • 2 tablespoons butter
  • Toppings of choice (e.g., fresh fruits, syrup, powdered sugar)

Equipment

  • Oven-safe skillet or baking dish
  • Mixing Bowl
  • Whisk or fork
  • Measuring cups and spoons

Method

  1. Preheat your oven to 425°F (220°C). This high temperature is crucial for helping your German pancakes (Dutch baby) to puff up beautifully.
  2. Place your oven-safe skillet or baking dish in the oven while it preheats. This will ensure that it’s hot when you pour in the batter.
  3. In a mixing bowl, combine the milk, eggs, vanilla extract, sugar, flour, and a pinch of salt. Whisk until the batter is smooth and free of lumps.
  4. Once the oven is preheated and the skillet is hot, carefully remove the skillet from the oven. Add the butter to the skillet, allowing it to melt and coat the bottom.
  5. Quickly pour the batter into the hot skillet over the melted butter. Be careful as the skillet will be extremely hot!
  6. Return the skillet to the oven and bake for about 20-25 minutes, or until the edges are puffed and golden brown.
  7. Once done, remove the skillet from the oven and let it cool for a minute. Slice the German pancakes (Dutch baby) into wedges and serve immediately with your choice of toppings.

Notes

  • Make sure your skillet is properly preheated for the best puff.
  • Feel free to experiment by adding spices like cinnamon or nutmeg for extra flavor.
  • For a savory version, consider adding cheese or herbs into the batter before baking.
