Ingredients

For the Potatoes:
  • 2.5 pounds russet potatoes Cut into 1-inch cubes
  • 2.5 tablespoons olive oil or canola oil
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon dried parsley
  • 0.5 teaspoon freshly ground black pepper
  • 8 cloves garlic Minced
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons grated parmesan cheese (optional)

Equipment

  • Large mixing bowl
  • Baking Sheet
  • Spatula or wooden spoon
  • Oven
  • Sharp knife and cutting board

Method

Instructions:
  1. Step 1: Preheat your oven to 425°F (220°C). This high temperature is key for achieving that crispy texture.
  2. Step 2: Wash and peel the russet potatoes. Cut them into 1-inch cubes, ensuring they are as uniform as possible for even cooking.
  3. Step 3: In a large mixing bowl, combine the cubed potatoes with olive oil, sea salt, smoked paprika, dried parsley, black pepper, and minced garlic. Toss everything together until the potatoes are well-coated.
  4. Step 4: Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for about 25-30 minutes, flipping halfway through for even browning.
  5. Step 5: Once roasted, remove from oven and sprinkle with fresh chopped parsley and grated parmesan cheese, if desired. Serve hot and enjoy!

Notes

  • This recipe can be easily doubled or halved to fit your needs.
  • For a vegan option, simply skip the parmesan cheese or use a vegan alternative.
  • Make sure to check the potatoes for doneness; they should be tender inside and crispy outside.
