Ingredients
  

  • 1 log soft fresh goat cheese 11 oz. (can substitute all or part with cream cheese)
  • 1.5 tablespoons finely chopped fresh chives (or 1 teaspoon dried)
  • 1.5 tablespoons finely chopped fresh parsley (or 1 teaspoon dried)
  • 1 tablespoon finely chopped fresh basil leaves (or 1 teaspoon dried)
  • 1.5 teaspoons finely chopped fresh oregano leaves (or 1/2 teaspoon dried)
  • 1 clove garlic minced (or 1/2 teaspoon garlic powder)
  • 1.5 teaspoons lemon zest
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper or freshly cracked to taste
  • 1/2 cup finely chopped pecans
  • 1 drizzle olive oil

Method
 

  1. Start by placing the goat cheese log in a mixing bowl. If you’re using cream cheese, make sure it’s softened to room temperature for easy mixing.
  2. To the bowl, add the finely chopped chives, parsley, basil, oregano, minced garlic, lemon zest, salt, and pepper. The aroma of these fresh herbs will immediately elevate your cheese log.
  3. Using a spatula, mix everything together until well combined. You want to ensure that the herbs and spices are evenly distributed throughout the cheese.
  4. Lay out a piece of plastic wrap on your countertop. Spoon the cheese mixture onto the plastic wrap and shape it into a log. Roll it up tightly, twisting the ends of the wrap to secure it. This will help shape and firm up the log.
  5. Place the wrapped cheese log in the refrigerator for at least 2 hours, or overnight if possible. This resting period allows the flavors to meld beautifully.
  6. Once chilled, unwrap the cheese log and roll it in the finely chopped pecans. This adds a delightful crunch and beautiful presentation.
  7. Transfer your Garlic Herb Cheese Log to a serving platter. Drizzle a little olive oil over the top for an extra touch of flavor before serving with crackers or fresh vegetables.
