- Start by patting the salmon pieces dry with paper towels. This helps to achieve a nice sear. Season both sides generously with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat until shimmering. This should take about 1-2 minutes.
- Carefully place the salmon pieces in the skillet, skin-side down. Cook for about 4-5 minutes without moving them, allowing a nice crust to form.
- Using a spatula, gently flip the salmon fillets over and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork.
- Reduce the heat to medium-low. Add 2 tablespoons of butter to the skillet along with the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Stir in the lemon juice and the remaining 2 tablespoons of butter. Let it melt into the sauce, then taste and adjust seasoning with more salt or lemon juice if desired.
