Ingredients
  

  • 1 lb jumbo shrimp (16 to 20 count per pound)
  • 2 tbsp fresh parsley (minced)
  • 1 large garlic clove (minced)
  • 1 tsp Dijon mustard (preferably Grey Poupon)
  • 1/2 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1/8 cup olive oil
  • 2 tbsp lemon juice

  • Sharp knife

Method
 

  1. In a small bowl, combine the minced garlic, Dijon mustard, salt, black pepper, olive oil, and lemon juice. Whisk together until well mixed.
  2. Place the shrimp in a large bowl and pour the marinade over them. Toss gently to ensure all the shrimp are coated with the marinade. Allow to marinate for at least 15 minutes.
  3. Heat your skillet over medium-high heat. Once hot, add a tablespoon of olive oil.
  4. Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until they turn pink and are opaque. Flip and cook for another 2-3 minutes.
  5. Once cooked, sprinkle with minced parsley and toss gently in the skillet to combine.
  6. Remove from heat and serve immediately over rice, pasta, or salad.

Notes

  • If using medium shrimp, be mindful of cooking times.
  • Experiment with different herbs like basil or cilantro.
  • This dish can be made ahead of time; reheat gently before serving.
