In a small bowl, combine the minced garlic, Dijon mustard, salt, black pepper, olive oil, and lemon juice. Whisk together until well mixed.
Place the shrimp in a large bowl and pour the marinade over them. Toss gently to ensure all the shrimp are coated with the marinade. Allow to marinate for at least 15 minutes.
Heat your skillet over medium-high heat. Once hot, add a tablespoon of olive oil.
Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until they turn pink and are opaque. Flip and cook for another 2-3 minutes.
Once cooked, sprinkle with minced parsley and toss gently in the skillet to combine.
Remove from heat and serve immediately over rice, pasta, or salad.
