Ingredients
  

For the Dish:
  • 2-3 pieces Boneless skinless chicken breasts cut into 1-inch pieces
  • 1 large Zucchini chopped
  • 2 cups Broccoli florets
  • 1 Bell pepper chopped
  • 2 cloves Garlic minced
  • 2 tablespoons Olive oil
  • 1 tablespoon Cajun seasoning or to taste
  • 1 teaspoon Black pepper

  • Baking Sheet
  • Knife and cutting board
  • Mixing Bowl

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chopped chicken, zucchini, broccoli florets, bell pepper, and minced garlic.
  3. Drizzle the olive oil over the chicken and vegetable mixture. Then sprinkle in the Cajun seasoning and black pepper. Toss everything until well coated.
  4. Lay out large pieces of aluminum foil (about 12x18 inches). Divide the chicken and vegetable mixture evenly among the pieces of foil.
  5. Fold the sides of the foil over the mixture and seal tightly.
  6. Place the foil packs on a baking sheet and bake for about 25-30 minutes.
  7. Carefully remove the foil packs from the oven and serve hot.

Notes

  • Feel free to swap chicken for shrimp or firm tofu.
  • Use your favorite vegetables like asparagus or green beans.
  • Store leftovers in the refrigerator for up to 3 days.
