- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the chopped chicken, zucchini, broccoli florets, bell pepper, and minced garlic.
- Drizzle the olive oil over the chicken and vegetable mixture. Then sprinkle in the Cajun seasoning and black pepper. Toss everything until well coated.
- Lay out large pieces of aluminum foil (about 12x18 inches). Divide the chicken and vegetable mixture evenly among the pieces of foil.
- Fold the sides of the foil over the mixture and seal tightly.
- Place the foil packs on a baking sheet and bake for about 25-30 minutes.
- Carefully remove the foil packs from the oven and serve hot.
Notes
- Feel free to swap chicken for shrimp or firm tofu.
- Use your favorite vegetables like asparagus or green beans.
- Store leftovers in the refrigerator for up to 3 days.
