In a large mixing bowl, combine the 16 oz of small curd cottage cheese, 1 tsp of vanilla extract, 3 tbsp of honey, and 4 large eggs. Use a whisk to blend these ingredients until they are fully incorporated.
Add the 1 cup plus 2 tbsp of all-purpose flour and 1 tsp of baking soda to the wet mixture. Gently fold the dry ingredients into the wet mixture until just combined.
Add the 1/3 cup of raisins and fold them in gently.
In a large non-stick griddle or frying pan, heat 2 tbsp of extra light olive oil over medium heat.
Pour about 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for an additional 2-3 minutes until golden brown.
Transfer the pancakes to a plate and keep them warm while you repeat the process with the remaining batter. Serve with your favorite toppings.
