Ingredients
  

  • 2 cups dark chocolate chips Use vegan chocolate chips for a fully plant-based dessert.
  • 14 ounces silken tofu This will give your mousse a creamy texture.
  • 1/3 cup almond milk Any plant-based milk can work here, but almond is a favorite.
  • 2 tablespoons maple syrup For natural sweetness.
  • 2 teaspoons vanilla extract Adds depth of flavor.
  • 1 pinch kosher salt Enhances the chocolate flavor.

Method
 

  1. Begin by placing the dark chocolate chips in a microwave-safe bowl. Heat them in the microwave in 30-second intervals, stirring in between, until they are completely melted and smooth. Be careful not to overheat the chocolate.
  2. In a blender or food processor, add the 14 ounces of silken tofu. Blend until it is completely smooth and creamy. This will serve as the base for your mousse.
  3. To the blended tofu, add the melted chocolate, 1/3 cup of almond milk, 2 tablespoons of maple syrup, 2 teaspoons of vanilla extract, and a pinch of kosher salt. Blend again until everything is well combined and the mixture is silky smooth.
  4. Taste your mousse and adjust sweetness if necessary. If you prefer it a bit sweeter, add more maple syrup to your liking and blend again.
  5. Transfer the mousse into your serving cups or bowls. Cover them with plastic wrap and refrigerate for at least 1 hour, allowing the mousse to firm up and the flavors to meld together.
  6. Once chilled, your Easy Tofu Chocolate Mousse is ready to serve! You can top it with your favorite toppings such as fresh berries, nuts, or even a drizzle of Chocolate Sauce for an extra treat.

Notes

  • You can prepare the mousse up to 2 days in advance and store it in the refrigerator.
  • The mousse may thicken slightly as it chills, so give it a good stir before serving.
  • You can also freeze it for up to a month; just let it thaw in the fridge overnight before serving.
