Easy Stuffed Mushrooms

Ingredients
  

  • 12 pieces button mushrooms or cremini/mini portobellos
  • 75 g panko breadcrumbs or gluten-free alternative
  • 2 tablespoons fresh aromatic herbs (parsley and marjoram), finely chopped
  • 2 tablespoons grated parmesan cheese
  • Salt and pepper to taste
  • Olive oil for drizzling

Method
 

  1. Preheat your oven to 375°F (190°C) to ensure that your mushrooms cook evenly and get that lovely golden color.
  2. Clean the mushrooms gently with a damp cloth. Remove the stems by gently twisting them out. Set aside the caps and finely chop the stems.
  3. In a mixing bowl, combine the chopped mushroom stems, panko breadcrumbs, fresh herbs, and grated parmesan cheese. Season with salt and pepper to taste. Drizzle a little olive oil into the mixture to help it bind.
  4. Using a spoon, fill each mushroom cap generously with the prepared stuffing. Be sure to press down a little to pack it in.
  5. Place the stuffed mushrooms on a baking sheet, drizzle a bit of olive oil on top, and pop them in the preheated oven. Bake for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
  6. Once baked, remove them from the oven and let them cool for a couple of minutes before serving. Enjoy your Easy Stuffed Mushrooms warm!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place them back in the oven at 350°F (175°C) for about 10 minutes.
  • Consider making a batch ahead of time and reheating them when needed!
