Preheat your oven to 375°F (190°C) to ensure that your mushrooms cook evenly and get that lovely golden color.
Clean the mushrooms gently with a damp cloth. Remove the stems by gently twisting them out. Set aside the caps and finely chop the stems.
In a mixing bowl, combine the chopped mushroom stems, panko breadcrumbs, fresh herbs, and grated parmesan cheese. Season with salt and pepper to taste. Drizzle a little olive oil into the mixture to help it bind.
Using a spoon, fill each mushroom cap generously with the prepared stuffing. Be sure to press down a little to pack it in.
Place the stuffed mushrooms on a baking sheet, drizzle a bit of olive oil on top, and pop them in the preheated oven. Bake for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
