Ingredients
  

  • 2 cups raw whole almonds
  • 1 teaspoon extra virgin olive oil
  • 2 tablespoons maple syrup
  • ½ teaspoon Spanish smoked paprika
  • 1 tablespoon finely chopped fresh rosemary (a little heaped)
  • ½ teaspoon ground cumin (freshly ground if possible)
  • ½ teaspoon ground coriander (freshly ground if possible)
  • ½ teaspoon fine salt

Method
 

  1. Start by preheating your oven to 350°F (175°C). This ensures that your almonds will roast evenly and get that perfect crunch.
  2. In a mixing bowl, combine the raw whole almonds with the extra virgin olive oil and maple syrup. Stir until the almonds are well-coated.
  3. Sprinkle in the Spanish smoked paprika, finely chopped fresh rosemary, ground cumin, ground coriander, and fine salt. Mix everything together thoroughly so that each almond is generously coated with the spice blend.
  4. Line your baking sheet with parchment paper for easy cleanup. Spread the almond mixture in a single layer across the sheet, ensuring they are not overcrowded. This allows for even roasting.
  5. Place the baking sheet in the preheated oven and roast for 10-15 minutes. Give them a stir halfway through to promote even cooking. Keep an eye on them as nuts can go from perfectly roasted to burnt very quickly.
  6. Once the almonds are golden and fragrant, remove them from the oven and let them cool on the baking sheet. They will continue to crisp up as they cool.

  • Store in an airtight container at room temperature for up to a week.
  • For longer storage, refrigerate them for up to a month.
  • Ensure almonds are completely cooled before sealing to prevent moisture buildup.
