  • 3 pieces eggs beaten
  • 2 boxes (8-oz) Jiffy cornbread mix
  • 2 cups shredded cheddar cheese
  • 2 cups chopped fresh broccoli florets
  • 1 cup cottage cheese
  • 1 cup milk

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Chop your fresh broccoli florets into bite-sized pieces. Optionally, steam for a softer texture.
  3. In a large mixing bowl, combine the beaten eggs, Jiffy cornbread mix, shredded cheddar cheese, chopped broccoli, cottage cheese, and milk. Mix until just combined.
  4. Grease your baking dish lightly. Pour the batter into the dish and spread it evenly.
  5. Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
  6. Let cool for a few minutes before slicing. Serve warm.
