Ingredients
  

  • 1 tablespoon olive oil for sautéing
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 pound ground beef the star protein
  • Salt and pepper to taste
  • 2 tablespoons taco seasoning adds flavor
  • 15 ounces black beans drained and rinsed
  • 16 ounces refried beans 1 can
  • 3 cups red enchilada sauce for flavor
  • 8-10 large flour tortillas for wrapping
  • 2 cups Monterey Jack cheese shredded
  • Fresh cilantro chopped, for garnish

Method
 

  1. Step 1: Sauté the Aromatics - In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Step 2: Brown the Beef - Add the ground beef to the skillet, breaking it apart with your spatula. Season with salt and pepper to taste. Cook until the beef is browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  3. Step 3: Season and Mix - Stir in the taco seasoning, black beans, and refried beans. Mix well to combine everything and cook for an additional 2-3 minutes to heat through.
  4. Step 4: Assemble the Enchiladas - Preheat your oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a large baking dish. Take a large flour tortilla and spoon a generous amount of the beef mixture in the center. Sprinkle with a bit of Monterey Jack cheese, then roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with remaining tortillas and filling.
  5. Step 5: Top with Sauce and Cheese - Once all enchiladas are in the baking dish, pour the remaining enchilada sauce over the top, ensuring they are well covered. Sprinkle the remaining Monterey Jack cheese on top.
  6. Step 6: Bake - Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
