Ingredients

For the Onion Rings:
  • 3 large onions Cut into 1/4-inch slices; sweet onions such as Vidalia work beautifully.
  • 2 cups all-purpose flour The base for the batter.
  • 1.25 teaspoons baking powder Helps the batter become light and airy.
  • 1 teaspoon onion powder Enhances the onion flavor.
  • 1 teaspoon paprika Adds a subtle smokiness and color.
  • 1.5 teaspoons garlic powder Brings a savory depth to the flavor.
  • 1.25 teaspoons salt Essential for seasoning the batter.
  • 1.5 cups milk Adjust as needed for batter consistency.
  • 1.5 cups panko bread crumbs Provides the signature crunch.
  • 0.25 teaspoon salt For seasoning the breadcrumbs.
  • 5 cups oil For frying; use vegetable or canola oil.

Equipment

  • Deep fryer or large pot
  • Slotted spoon or spider
  • Cooling rack
  • Mixing bowls
  • Measuring cups and spoons

Method

Instructions:
  1. Start by peeling the onions and slicing them into 1/4-inch thick rings. Gently separate the rings and set them aside.
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, onion powder, paprika, garlic powder, and 1 1/4 teaspoons of salt. In a separate bowl, whisk together the eggs and milk until well combined. Gradually pour the wet ingredients into the dry mixture, stirring until just combined. The batter should be thick enough to coat the onion rings but not too thick.
  3. In another bowl, mix the panko breadcrumbs with 1/4 teaspoon of salt. This will add an extra layer of flavor to the crispy coating.
  4. In a deep fryer or large pot, heat the oil to 350°F (175°C). Use a thermometer for accuracy to ensure your onion rings fry perfectly.
  5. Take an onion ring, dip it into the batter, allowing any excess to drip off. Then, coat it generously with the panko breadcrumbs, pressing lightly to adhere.
  6. Carefully place the coated onion rings into the hot oil in batches, ensuring not to overcrowd the pot. Fry them for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the onion rings and transfer them to a cooling rack lined with paper towels.
  7. Once all the onion rings are fried, serve them hot as a delicious snack or side dish. Pair them with your favorite dipping sauce for an extra flavor kick!

Notes

  • For extra flavor, marinate the onion rings in buttermilk for a few hours before battering.
  • Don’t skip the panko breadcrumbs; they are essential for the perfect crunch!
  • Make sure the oil is hot enough before frying to avoid greasy rings.
