In a large mixing bowl, combine the ground chicken, minced ginger, minced garlic, coleslaw mix, sliced green onions, salt, sugar, sesame oil, and Chinese five spice powder. Mix everything together until well incorporated.
Lay out an egg roll wrapper on a clean surface, with one corner pointing towards you. Place about 2-3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides. Roll it tightly away from you, sealing the top corner with a little beaten egg.
In a frying pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Carefully place a few egg rolls in the hot oil, frying them for about 3-4 minutes on each side until golden brown and crispy. Transfer them to a plate lined with paper towels to absorb excess oil.
Once all the egg rolls are fried, serve them hot with your favorite dipping sauce.
