Ingredients

For the Crust:
  • 1/2 cup unsalted butter slightly softened
  • 1 cup brown sugar lightly packed
  • 1 1/3 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
For the Filling:
  • 1 can (14 ounce) sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 lemon zest

Equipment

  • Mixing bowls
  • 9x9 inch baking pan
  • Whisk
  • Spatula
  • Measuring cups and spoons

Method

Instructions:
  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures that your squares bake evenly.
  2. Step 2: Make the Crust - In a large mixing bowl, beat together the softened butter and brown sugar until creamy. Gradually add the all-purpose flour, oats, baking powder, and salt. Mix until crumbly, but don’t overwork it; you want the texture to remain slightly coarse.
  3. Step 3: Press the Crust into the Pan - Take about two-thirds of the crumb mixture and press it firmly into the bottom of your greased 9x9 inch baking pan.
  4. Step 4: Prepare the Lemon Filling - In a separate bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest until smooth. Pour this mixture over the crust in the pan.
  5. Step 5: Add the Crumb Topping - Sprinkle the remaining crumb mixture evenly over the lemon filling.
  6. Step 6: Bake - Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the filling is set.
  7. Step 7: Cool and Cut - Once baked, remove the pan from the oven and let it cool completely on a wire rack. Once cooled, cut into squares and serve.

Notes

  • These squares taste better after chilling, as the flavors meld together.
  • Store in an airtight container at room temperature for up to 3 days.
  • You can freeze the squares for up to 3 months; thaw in the fridge overnight before serving.
