For the Sauce:
  • 1 lb chicken breast cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 5 garlic cloves minced
  • 28 oz crushed tomatoes
  • 1 cup cream
  • 1 cup Romano cheese grated
  • 4 oz fresh spinach

Method
 

Preparation Steps:
  1. Begin by cooking the penne pasta according to the package instructions. Make sure to salt the water well for maximum flavor. Once al dente, drain the pasta and set it aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, Italian seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the crushed tomatoes and bring to a simmer. Allow the tomatoes to cook for about 5 minutes, letting the flavors meld.
  4. Reduce the heat to low and stir in the cream and grated Romano cheese. Mix well until the cheese is melted and the sauce is creamy.
  5. Return the cooked chicken to the skillet and add the fresh spinach. Stir until the spinach wilts and everything is heated through. Finally, combine this mixture with the cooked penne pasta. Toss until the pasta is well-coated in the creamy sauce.
  6. Serve your Creamy Italian Chicken Pasta hot, garnished with additional Romano cheese if desired. Pair it with a green salad or garlic bread for a complete meal.
