Ingredients

For the Chicken:
  • 4 pieces boneless skinless chicken breasts
  • 1 teaspoon Kosher salt for seasoning
  • to taste Freshly ground pepper
  • 1 teaspoon paprika for smokiness
  • 2 inches peanut oil for frying
  • 1 large egg for binding
  • 1/2 cup nonfat milk to soak the chicken
  • 1 cup all-purpose flour for coating
  • 1 tablespoon malted milk powder enhances flavor and texture
  • 1 tablespoon confectioners sugar adds sweetness
  • 1/4 teaspoon baking soda for crunch
  • 1/4 teaspoon dry mustard for zest
  • 1 tablespoon pickle juice (optional) for tang
  • 4 pieces soft hamburger buns to hold the sandwich
  • as needed Chick-fil-A Sauce or your favorite sauce for dipping

Equipment

  • Large skillet or deep fryer
  • Meat mallet or rolling pin
  • Bowl
  • Another bowl
  • Kitchen tongs
  • Plate lined with paper towels

Method

Preparation Steps:
  1. Start by seasoning the chicken breasts generously with Kosher salt, freshly ground pepper, and paprika. If you want to tenderize your chicken, place it between two sheets of plastic wrap and pound it to an even thickness.
  2. In a bowl, whisk together the egg and nonfat milk. If you’re using pickle juice, add that in as well.
  3. In a separate bowl, combine the all-purpose flour, malted milk powder, confectioners sugar, baking soda, and dry mustard.
  4. Dip each chicken breast into the milk mixture, then coat it thoroughly in the flour mixture, pressing the flour onto the chicken.
  5. In a large skillet or deep fryer, heat about 2 inches of peanut oil over medium-high heat until it reaches 350°F (175°C).
  6. Carefully place the coated chicken breasts into the hot oil, cooking them for about 4-5 minutes on each side or until golden brown and cooked through.
  7. Once cooked, transfer the chicken to a plate lined with paper towels to drain excess oil. Toast your soft hamburger buns if desired, then place the crispy chicken onto the bottom half of each bun.
  8. Top the chicken with your favorite Chick-fil-A Sauce or any sauce of your choosing, add pickles or other toppings if desired, then place the top bun on.

Notes

  • For a healthier option, bake the chicken at 400°F (200°C) for about 20-25 minutes.
  • Consider using chicken thighs for a juicier sandwich.
  • Store leftover chicken in an airtight container in the fridge for up to 3 days.
