Ingredients
  

  • 1/2 cup Walnut pieces diced
  • 1 1/2 cups Old-fashioned oats gluten-free if desired
  • 1/4 teaspoon Kosher or sea salt
  • 1 cup Tahini look for a high-quality brand
  • 1 cup Coconut finely grated, no sugar added (plus more for rolling)
  • 1/4 cup Raw honey
  • 2 teaspoons Raw honey
  • 1/2 teaspoon Pure vanilla extract

Method
 

  1. Gather all your ingredients and measure them out. This makes the process smoother and more enjoyable.
  2. In a large mixing bowl, combine the old-fashioned oats, diced walnut pieces, and kosher salt. Mix well to ensure everything is evenly distributed.
  3. In a separate bowl, whisk together the tahini, raw honey, and pure vanilla extract until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients. Add the finely grated coconut and mix everything together until well combined.
  5. Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture, placing each ball on the lined baking sheet.
  6. If desired, roll each ball in additional finely grated coconut for an extra touch of flavor and texture.
  7. Place the baking sheet in the refrigerator for at least 30 minutes to allow the balls to set. This helps them hold their shape better.

Notes

  • Store in an airtight container in the refrigerator for up to one week.
  • Freeze for longer storage in a freezer-safe container or bag.
  • Thaw in the refrigerator or enjoy straight from the freezer.
