  • 1 lb chicken tenders or chicken breasts cut into bite-sized pieces.
  • 12 pieces wooden skewers soaked in water to prevent burning during grilling.

Method
 

Preparation Steps:
  1. In a mixing bowl, combine the sugar, salt, ground cinnamon, fresh thyme leaves, white pepper, minced garlic, and olive oil. Stir well to create a fragrant marinade.
  2. Add the chicken tenders or cut-up chicken breasts to the marinade, ensuring each piece is well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. For best results, marinate for up to 2 hours.
  3. While the chicken marinates, soak your wooden skewers in water for about 30 minutes. This prevents them from burning on the grill.
  4. Once the chicken is marinated, take the skewers out of the water. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  5. Preheat your grill or grill pan over medium-high heat. Make sure it’s hot enough to create a nice sear on the chicken.
  6. Place the chicken skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
  7. Once cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh thyme or parsley before serving.

Notes

  • Soak the skewers long enough to prevent burning on the grill.
  • If using metal skewers, there's no need to soak them.
  • Experiment with other spices like cumin or paprika for a different flavor profile.
  • Squeeze fresh lemon juice over the skewers just before serving for added zest.
