Preparation Steps:
- In a mixing bowl, combine the sugar, salt, ground cinnamon, fresh thyme leaves, white pepper, minced garlic, and olive oil. Stir well to create a fragrant marinade.
- Add the chicken tenders or cut-up chicken breasts to the marinade, ensuring each piece is well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. For best results, marinate for up to 2 hours.
- While the chicken marinates, soak your wooden skewers in water for about 30 minutes. This prevents them from burning on the grill.
- Once the chicken is marinated, take the skewers out of the water. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
- Preheat your grill or grill pan over medium-high heat. Make sure it’s hot enough to create a nice sear on the chicken.
- Place the chicken skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
- Once cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh thyme or parsley before serving.
Notes
- Soak the skewers long enough to prevent burning on the grill.
- If using metal skewers, there's no need to soak them.
- Experiment with other spices like cumin or paprika for a different flavor profile.
- Squeeze fresh lemon juice over the skewers just before serving for added zest.
