  • ½ teaspoon nutmeg
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 cups shredded zucchini
  • 1 cup semisweet chocolate chips plus more for sprinkling

Method
 

  1. Step 1: Preheat the Oven. Start by preheating your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Prepare Your Loaf Pan. Grease your loaf pan with non-stick spray or line it with parchment paper.
  3. Step 3: Mix Dry Ingredients. In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, sea salt, cinnamon, and nutmeg until well combined.
  4. Step 4: Combine Wet Ingredients. In another bowl, beat the eggs, then add vegetable oil, granulated sugar, and vanilla extract. Whisk until smooth.
  5. Step 5: Combine Mixtures. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Step 6: Add Zucchini and Chocolate Chips. Fold in shredded zucchini and semisweet chocolate chips using a spatula.
