Ingredients
  

For the Cookies:
  • 2 boxes devil's food cake mix (15.25 ounces each)
  • 1 cup canola oil
  • 4 large eggs
For the Mint Filling:
  • 18 oz cream cheese (softened)
  • 1/4 cup butter (softened)
  • 2 1/2 cups powdered sugar
  • 1 teaspoon mint extract
  • Green food coloring

Method
 

Directions:
  1. Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: In a large mixing bowl, combine the devil's food cake mix, canola oil, and eggs. Mix until well blended; the dough will be thick.
  3. Step 3: Scoop tablespoon-sized amounts of dough, roll them into balls, and place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  4. Step 4: Bake for 10-12 minutes or until the edges are set. Remove and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  5. Step 5: For the filling, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and mix well.
  6. Step 6: Stir in mint extract and green food coloring until desired shade is reached.
  7. Step 7: Spread the mint filling on the flat side of one cookie, top with another to create a sandwich. Repeat with remaining cookies.

Notes

  • Store assembled cookies in an airtight container in the refrigerator for up to a week.
  • Freeze cookies in a single layer, separating layers with parchment paper, for up to 2 months.
  • If the filling is too soft, chill it before spreading.
