- Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
- Step 2: In a large mixing bowl, combine the devil's food cake mix, canola oil, and eggs. Mix until well blended; the dough will be thick.
- Step 3: Scoop tablespoon-sized amounts of dough, roll them into balls, and place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Step 4: Bake for 10-12 minutes or until the edges are set. Remove and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Step 5: For the filling, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and mix well.
- Step 6: Stir in mint extract and green food coloring until desired shade is reached.
- Step 7: Spread the mint filling on the flat side of one cookie, top with another to create a sandwich. Repeat with remaining cookies.
